Biography:
Cantu-Jungles has earned her M.S. and Ph.D. in Biochemistry from the Federal University of Parana (Brazil) and has joined the Food Science department at Purdue University as a postdoc in 2018. Her research has focused on how physico-chemical structures of dietary fibers can affect growth and metabolism of gut bacteria, with an ultimate goal to promote human health. Her focus has been on the selection and modification of dietary fiber structures for gut microbiota modulation, targeted promotion of specific bacterial taxa and inter-individual variability in gut microbiota-fiber responses.
